Greek Turkey Meatball Salad

It’s no secret I’m a big salad girl. But there’s nothing more blah than a basic boring salad so make no mistake, those aren’t welcome here. This Greek-inspired turkey meatball salad is no exception. It is quick and easy to make, perfect for meal prep, and will make your mouth water every time.

Here are the details:

For the Meatballs:

  • 1 lb pasture raised ground turkey

  • 1/2 yellow onion, chopped

  • 2 tbs flour (I used all purpose gluten free)

  • 2 eggs

  • 1 tbs minced garlic

  • 2 tbs basil (fresh preferred but dried works too)

  • 2 tsp oregano

  • 2 tsp dill

  • 1 tsp salt (or to taste)

  • 1 tsp pepper

  1. Mix together all ingredients in a bowl, scoop into balls

  2. Cook in air fryer on 400F for 9 mins or oven on 400 for 12 mins

For the Tzatziki:

  • 1 cup plain greek yogurt

  • 1/4 cup fresh chopped dill

  • 1 tbs (heaping) minced garlic

  • Juice from 1 whole lemon

  • 1/2 cup cucumber chopped

  1. Mix all ingredients well.

For the Salad:

  • arugula

  • cherry tomatoes, chopped

  • cucumbers, chopped

  • kalamata olives, halved

  • red onion, diced finely

For the Dressing:

  • 1/4 cup extra virgin olive oil

  • 3 tbs red wine vinegar

  • 1 tbs honey

  • juice from 1/2 lemon

  • Salt to taste

  1. Whisk together.

Prepare meatballs and put in oven/air fryer. Make the tzatziki, whisk together the dressing, and prep the salad.

Add meatballs on top of salad, add tzatziki and dressing, and enjoy!
